In European countries (e.g. France, Germany, the Netherlands, England, etc.) where the certification of specific breeds has been completed, the certification of cheese products is also ensured. This process is ensured through the complete analysis of the goat genome and is done with tools of molecular biology – arrays of Mononucleotide Polymorphisms (SNPs) – which pave the way for the traceability of animal products. These arrays have been developed based on the indigenous breeds of Central and Northern Europe and not of Southern and Eastern Europe including Greece. Therefore, one of the challenges is the development of an SNP array with direct application to the traceability of the products of the Greek goat breeds which will give the “national” identity to the products and will be innovative.
At the same time, an innovative methodology for the control of adulteration of milk from water with the simultaneous addition of milk proteins and sugars will be developed, which cannot be detected by the usual methods applied in the cheese companies. The companies “STAMATIS PROIKAS SA” and KERASSA aim through the proposed investment plan to develop a new methodology for detecting this type of fraud.
